One of my favorite things about the summer is being able to enjoy a tomato pie when tomatoes are at their absolute best! A great way to show off all your hard work in the garden! Kids love it because it is like a pizza. Since there is mayo used in this version, I might even try it with some shredded arugula leaves and some cooked crumbled bacon over the top, like a BLT!
