These oven-roasted vegetables are made with green beans and only a tablespoon of olive oil, so they are much healthier than their potato counterparts. To make this easy Southern vegetable recipe, cut the ends off of the green beans and boil them for a few minutes in salted water. Then, spread the beans on a baking sheet and drizzle them with the olive oil and vinegar and sprinkle them with salt. Roast the green beans in the oven and enjoy a guilt-free snack!
