Mixed Vegetable Succotash combines lima beans, onion, garlic, zucchini, corn, and tomatoes for a vegetable side dish that can't be beat. You can make this succotash in a regular skillet or pan, but for magical results it should be made in a cast iron skillet. This warm summer salad can be served up with grilled chicken or any other summer fare.
