I am a Southerner and I lived in NOLA for several years. You don't put chili powder in shrimp creole. You use gumbo file' (dried, ground sassafras tree leaves).

I'm not able to take a NOLA vacation anytime soon... but I think trying this recipe might make me feel like I'm there! Yum!
