The corn "base" for this dish somewhat reminds me of the wonderful flavor of Mexican street - style corn, sometimes called "crazy" corn! It is so much easier and less messy to eat. This dish is perfect for the warm summer months when you want something a little lighter than rice or pasta with your shrimp!
