This is really similar to a soup my father made for us years ago, though his version incorporated corn into it, and I don't think he used quite as much cheese as this. It was really good (my daughters loved it) and I definitely want to make this version up. As we get into colder weather, this would be an ideal soup for those chilly days. Has anyone tried this with leaving the potato skins on?

Filling, comforting and oh so delicious, this Fully Loaded Cheesy Baked Potato Soup has become our new family favorite! We mostly follow a low carb eating plan so used sweet potatoes and it was very very good. Other than baking the potatoes it is quite quick and easy to make so works well for a mid week evening family meal. Bon appetit!!
