This is nice! We like jambalaya, and it's one of our usual go-to dishes we order when we're dining out at a Cajun restaurant. I like the idea of turning this into a full-fledged soup and it would be perfect for when the weather gets colder and you're looking for something to take the chill off. We almost always use chicken and sausage when we make this. Shrimp is an option if we have some on hand, and we've been known to toss some beef in as well.
