"Try my caramel cake recipe at the holidays or anytime of the year. Trust me this one will melt in your mouth and keep you coming back for more. Plus it is easy to make as it is really a cake mix recipe that has additional ingredients to make it amazing!"

  • 1 package yellow cake mix (15.25 oz)
  • 1 cup chopped pecans
  • 1 cup vegetable oil
  • 2 eggs
  • 1 cup caramel ice cream topping
  • 2 tablespoons hot water
  • 1 cup shredded coconut
  • 2 cups powdered sugar
  • 3 tablespoons caramel ice cream topping
  1. Mix together cake ingredients for 3 minutes.

  2. Spread in a greased 9×12 pan and bake at 325 degrees for 45 minutes or until done.

  3. Let cool.

  4. Make icing using powdered sugar, caramel, milk and melted butter.

  5. Mix all icing ingredients together and beat until smooth. Spread over cooled cake. Sprinkle with an additional 1/2 cup of chopped pecans.
