If you love the fluffy pineapple frosting that traditionally tops Southern Mandarin orange cake, also known as pig pickin' cake, then you are guaranteed to love this no-bake recipe for Pig Pickin' Pie. This sweet and creamy dessert recipe combines the best elements of pig pickin' cake's frosting and turns it into its own delicious dessert. The pie's filling is made from a combination of crushed pineapple, pudding mix, and whipped topping. The filling is then nestled in a sweet and salty crust made from Ritz crackers, melted butter, and sugar.

I agree that the name is very intriguing! I've never heard of pig pickin cake or pie before, but this looks really good.

The name is what drew me in, but the topical flavors have me craving this recipe!
