When you think of baked chicken recipes, you probably don't think of using soda as a marinade. This Southern comfort food recipe will surprise your taste buds because these chicken drumsticks are both salty and sweet. Even if you prefer Southern fried chicken recipes, you should give this unique recipe a try. It's always fun to try something new and the sauce on this chicken resembles barbecue sauce. This baked chicken recipe also uses its own marinade to make the sauce. That means that the same delicious taste flavors the meat as well as the sauce!

This chicken would also be a great conversation starter at a tailgate party. Ask your guests to guess the secret ingredient! Ingredients

  • 1 (12-ounce) can Coca-Cola
  • 1/4 cup finely chopped onion
  • 1/4 cup brown sugar
  • 2 tablespoons ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon finely minced garlic
  • 1 tablespoon finely minced fresh ginger
  • 1 teaspoon dry ground mustard
  • 1 teaspoon salt
  • 12 chicken drumsticks
  • 1 cup chicken broth

Instructions

  1. Combine all marinade ingredients in a very large plastic zip-top bag and add chicken. Close the top securely and use your hands to massage the chicken with the marinade so each piece is coated well.

  2. Refrigerate for several hours or overnight.

  3. Preheat oven to 400 degrees F. Line a large rimmed baking sheet with foil and arrange the drumsticks in one layer.

  4. Pour the marinade liquid into a small saucepan, add the chicken broth and bring to a rolling boil, stir well and lower heat. Continue to cook the sauce at a low boil for at least 20 minutes until it is syrup-y.

  5. Brush sauce liberally over drumsticks and bake for 45 minutes, brushing with additional sauce two or three more times. Continue to bake until the chicken is browned and cooked through.

Notes

This would be a good recipe for chicken wings as well. Use 4 pounds of chicken drummetttes and bake them for 30-40 minutes.
