This is a old family Favorite recipe that has been passed down for 3 generations in our family!! We love this Old Fashioned Chicken and Rice Casserole. Although, we have not used the minute rice, and never knew you can buy it in a can. ?? Really??? We also add some frozen broccoli spears and 2 cans of water to clean out the soup cans. I'll never forget the time my mom thought she would change it up and put in a layer of canned spinach. As a kid, I was like Oh no way!! Now it is a good replacement.. Thank you so much for sharing this free casserole recipe.

Hi Cheryl Y, in this recipe the rice is just measured with a soup can, the rice itself doesn't come in a can. So, rather than using a measuring cup, you can just pour the rice into one of the emptied soup cans and measure that way. I definitely understand the confusion though!
