Mom's Make-Ahead Chicken Wild Rice Casserole will be a lifesaver on busy nights! This easy Southern recipe creates two 8 x 8-inch casseroles, so the extra prep time is really worth it. Chicken, wild rice, mushrooms, and carrots are all nestled in a homemade cream sauce. Mascarpone cheese helps make the sauce extra rich and creamy. This casserole recipe can either be stored in two gallon freezer bags or two pans, so there are plenty of convenient  options. Simply top the casserole with sliced almonds and bake just before you're ready to enjoy it!

The words Make Ahead in the recipe title first caught my eye, followed immediately by Wild Rice which I absolutely LOVE! We did not actually make it ahead because we had ample time on Saturday and it did not actually take that long to make. We omitted the celery (because we are not crazy about celery) and added 2 cloves of crushed fresh garlic. Everyone had second helpings (always the best sign of approval) and the teenagers wanted to know when we would be having it again so it was a great winner!
