This looks really appealing, though I'm curious about the possibility of swapping hash brown potatoes for the bread. There's also a little discrepancy in the written introduction to the recipe. The intro makes reference to mushrooms in the recipe, but in the actual description, mushrooms aren't even mentioned. If I made this, I'd probably decrease the amount of zucchini and add some additional peppers and onion, plus some tomatoes. What adjustments, if any, would you make?
