We'll often include some spinach in our omelets, so this recipe is something we're automatically drawn to. Anything with hash browns and bacon already piques my interest. I hadn't encountered chicken bacon before, though I've had turkey bacon on occasion and like it. I know this dish is trying to be as healthy as possible, but I can't help but want to sprinkle some shredded cheddar cheese on top as a finishing touch.
