I love these sorts of breakfast casseroles that can be prepared the night before. They're really a help when things get tangled up in the holiday time crunch. This is definitely a breakfast dish that could handle a crowd. I've made similar dishes using hash browns as the base, but the idea of using English muffins is a good one.
