If you love both Italian food and taco night, then this recipe for Texas Lasagna is perfect for you. This ground beef casserole combines traditional Tex-Mex ingredients in one dish for a hearty, filling, and easy meal. Seasoned ground beef is layered with tortillas and cheese before getting baked in the oven, but the best thing about this casserole is that you can top it with anything and everything. You can also make this casserole ahead of time and keep it in the freezer for busy weeknights. If you have an appetite the size of Texas, look no further than this recipe!

This is close to a Mexican-style lasagna I've made before. I normally include some diced onion when I'm browning ground beef, and I do like the use of the corn tortillas as the dividers. I've encountered a couple that use flour tortillas, but I prefer using corn. This is a nice and easy to assemble casserole, and I definitely will be making this again. As a garnish, I've usually used the guacamole or salsa flavored tortilla chips.

Where has this been all my life! I love how this is a twist on a typical dinner dish! Definitely taking place of taco Tuesday!
