Tex-Mex Meatballs and Rice is the perfect recipe for your Cinco de Mayo festivities. Serve these Tex-Mex flavored meatballs with rice for a complete meal. The meatball recipe combines lean and flavorful ground beef with bread crumbs, cheese, and egg. After the meatballs bake in the oven, they are smothered in a flavorful combination of tomato sauce and green chilies. A sprinkling of cheese or fresh, chopped cilantro would be the perfect complement to these juicy, tender meatballs.

Unfortunately this recipe gets tripped up by a common problem. One of the main ingredients is no longer available. Ro-Tel apparently released at one time a mild tomato and green chili sauce that is now discontinued. It sounds like something that could be rather easily replicated with other commercially available sauces, but I haven't done a search for a useful replacement yet. It looks quite tasty, and I like the idea of using brown rice in place of white, though my own personal preference is for using white rice in dishes like this.
