Chicken fried steak is a Southern classic, but it is not without its faults. If you don't like using cube steak to make your chicken-fried creation, try this recipe for Perfect Chicken Fried Steak that uses rib-eye steaks instead. The pieces of steak are dipped in a cracker mixture, a combination of eggs and milk, and then again into the cracker mixture. The steaks are then fried until golden brown and crispy. Serve the steaks with rice or mashed potatoes and a generous ladle of creamy gravy.

This recipe is a bit different from the ones I'm accustomed to. I haven't tried it with rib-eye steaks before, and I should give it a try. Our local Wal-Mart is rather liberal with their meat markdowns, so I should be able to find some rib-eyes to experiment with. Using the crushed saltine crackers with the breading is a really good idea and should solve any problems others might have with the breading not sticking.
