I love hamburger steaks. My parents used to make them, along with brown gravy, and I remember having them with mashed potatoes, as well as rice and noodles from time to time. I seem to recall them using a binder for the steaks, but I'm hazy as to what they might have used. I know I haven't used one when I've made them, though I have been known to treat them like a chicken fried steak and give them a coating. I've also added diced pepper and onion to mine as I'm making them.
