This reminds me a lot of the quick casseroles we used to throw together when we had all the kids living at home. We would always use cans of Cream of Mushroom soup as described in the first recipe. Has anyone tried making this with the homemade versions of the soup mentioned? My wife would often include peas along with the carrots. As for cheese, we also would range from cheddar to colby jack, though there were some times when we would melt some slices of sharp American cheese on top.
