I love enchiladas. They're really easy to make, and allow for a lot of variety with the fillings. I like the addition of the corn and black beans in this recipe, along with the use of both cheddar and Monterey Jack cheese. I normally add a bit of diced onion to the ground beef as I'm browning it. I haven't used avocado as a garnish for this before since I normally just use some guacamole on the side, but I'll give it a try.
