One-pan meals are the perfect dinner solution for those busy weeknights. This 30-Minute Skillet Enchilada Recipe can be on the table in, that's right, 30 minutes! If you love beef enchiladas and meals with minimal clean-up, then this is the recipe for you. Ground beef in a rich enchilada sauce forms the base of this recipe. Delicious corn tortillas are layered on top of the beef mixture. The remainder of the fantastic meat sauce is layered on top of the tortillas along with shredded cheese, green onions, cilantro, and black olives. Then, place your oven-safe skillet in the oven to allow the cheese to melt. This is a great one-skillet meal that everyone will love!

This is a super simple enchilada recipe, just basically skipping the step that involves rolling the filling up in the tortillas. I'm not overly fond of olives, though my wife loves them. I'm a bit more tolerant of black olives, so I can deal with their inclusion. I would add some green pepper to the onion, garlic and beef as they're being browned. Someone had also suggested trying it with green enchilada sauce in place of the red. I might well give that try the next time I make these.
