This is a super simple enchilada recipe, just basically skipping the step that involves rolling the filling up in the tortillas. I'm not overly fond of olives, though my wife loves them. I'm a bit more tolerant of black olives, so I can deal with their inclusion. I would add some green pepper to the onion,garlic and beef as they're being browned. Someone had also suggested trying it with green enchilada sauce in place of the red. I might well give that try the next time I make these.
