Creamy Ranch Mashed Potato Cakes
"These individual mashed potato cakes are cute, automatically portioned, and irresistible. Use instant or leftover mashed potatoes and these cakes will be ready in no time. Mix sour cream, freshly grated Parmesan cheese, bacon bits, and eggs into the cooked potatoes. Divide the batter among a 12-cup muffin tin and bake until crispy on the outside. Garnish the cakes with sour cream and chives for a great side dish to suit your holiday table. You can't go wrong with this recipe!"
