Sweet potatoes are great for a low carb eating plan so I am always on the look out for new good recipes, such as this one. We omitted the vanilla extract and the marshmallows because we felt that would be too sweet also the rolled oats. With the addition of sour cream in the topping it was delicious and something we will definitely be making again.

My aunt makes something similar for Thanksgiving...it's positively irresistible!
