This sounds really good, and a nice way to use some leftover ham. We'll probably have ham for Christmas, so this recipe will definitely come into play in the days after. I recently picked up some of the Rice Infusions by Uncle Ben, and I think the Spanish Rice version might work well in a dish like this. I haven't used the Ready Rice flavors, but they sound like a good thing to have for use in a pinch. It'd be easy to use regular rice in this and then just add some garlic and butter to taste before assembling.

This would be a fantastic recipe to try for Easter!
