Everyone loves mac and cheese, but sometimes the classic mac and cheese recipes just don’t satisfy the cravings. This recipe for Poblano Chicken Mac and Cheese is a great way to spice up your mac and cheese while still staying faithful to the classic mac and cheese recipe that everyone loves. This recipe is packed with flavor from the cheeses that are used, and the Poblano peppers add a subtle spice to the dish. There’s some cream cheese to add some extra richness and creaminess, and there are tortilla strips on top that made it deliciously crunchy!

I always love adding a bit of spice or heat to my macaroni and cheese and this is a wonderful recipe to try. I've made something very similar using ground beef rather than chicken, but this version sounds really tasty as well. I like the idea of adding the tortilla strips as a topping, and I know there are some spicy versions of the tortilla strips already commercially available. I'll need to look for the those the next time I hit the grocery store.
