This one-pan-wonder is the perfect meal to make in the midst of a busy week. Aunt Laura's Jambalaya is filling, delicious, and simple to make. The recipe calls for sausage, but you can make this dish with any protein you happen to have on hand. The base for this classic Cajun dish is a combination of onions, green bell pepper, and celery. Rice gets added to the mix with chicken broth and tomatoes. Stir in sliced scallions at the end of cooking to give this dish a bright and fresh finish.

I lived in Louisiana for ten years, and this is a great Jambalaya recipe. Very Authentic. I'll probably add some of my own favorite spices though.
