I'm not terrifically fond of cornbread, but the addition of cheddar and spinach to this recipe sounds really appealing. I'm glad this is a from-scratch recipe since I've been displeased with some of the boxed cornbread mixes I've had in the past. Knowing my preference for spicy things, I think a jalapeno and cheddar muffin might also be appealing to me. Has anyone tried making the spinach and cheddar cornbread with adding a bit of sausage or bacon?
