Whip up an old-fashioned Southern dessert in no time at all with this recipe for Southern Pig Pickin' Cake. Pig pickin' cake is a classic Southern cake that features Mandarin oranges and plenty of fruit flavor. It is called "pig pickin'" because it was traditionally served at Southern pig roasts and barbecues. This cake recipe is impossibly easy to make because it makes use of store-bought cake mix. The finished cake is topped with a homemade frosting made from pudding mix, whipped topping, and crushed pineapple.

This is quite an involved cake! I'll have to make it on a day I can devote time and a mess to! But it looks worth it! LUSCIOUS! With all that cream filling you make with pudding mix and pineapple-I didn't know you could do that! It opens up a whole world of flavor possibilities now! lol The author uses stainless steel baking pans-I'd like to win some of those!
