OMG- I love this recipe for the Do Nothing Pineapple and Coconut Cake. After reading the written recipe and all the comments I so have to bake one. The lady makes this cake for scratch and not a box mix, I love it, because you know what is in the cake. Sure you need to measure out the ingredients and mix them by hand, but what's better then a cake made from scratch? Pineapple juices are used and no oil or butter in the cake, so I can see this being a heave dense cake but oh so tasty. I also seen in the comments that she makes her own crushed pineapple, a woman after my own heart..I wounder if I could add cherry to the mixture? I love the taste of pineapple, coconut and cherry together. I so want to make this one. I'm sure it would be a big hit for a barbecue dinner dessert. Thank you so much for sharing this free homemade cake recipe.
