Good Friday Green Gumbo is such an amazing dish from Louisiana, and it's steeped in tradition and history. It's got the base of a normal gumbo recipe, but it has loads of added flavor from greens like spinach, kale, collard greens, and more. Traditionally, this green version of gumbo is served on Good Friday -- the Friday before Easter -- because that's the time of the year when these greens are fresh, but this dish is so warm and tasty to not eat any time of the year.
