These delicious Cookie Butter Oatmeal Bars feature three distinct layers that combine to make an oatmeal bar recipe that is impossible to resist. The base of these bar cookies is similar to a basic oatmeal cookie, and it is followed by a sinfully decadent combination of chocolate and cookie butter. A brown sugar and oatmeal crisp topping finishes these oatmeal cookie bars. These bars are endlessly versatile because you can enjoy them for breakfast or dessert.

I love oatmeal cookies, and oatmeal chocolate chip cookies are even better. I like the idea of making these into cookie bars. They make a great take to work treat. I am not familiar with cookie butter, but I'll look into that this weekend. I think these bars with be wonderful with a hot cup of coffee!

These were amazing! I usually don't like oatmeal desserts, but I would definitely eat these again!

These were super rich and delicious! I had trouble making the crust layer come together, so I just added a bit of water to it. I also ended up baking the crust for about 15 minutes. I added a bit of cinnamon to the topping so that it would echo the cookie butter. Overall this was a simple, quick recipe. I would definitely make these again!

These were perfect!
