I love oatmeal cookies, and oatmeal chocolate chip cookies are even better. I like the idea of making these into cookie bars. They make a great take to work treat. I am not familiar with cookie butter, but I'll look into that this weekend. I think these bars with be wonderful with a hot cup of coffee!

These were super rich and delicious! I had trouble making the crust layer come together, so I just added a bit of water to it. I also ended up baking the crust for about 15 minutes. I added a bit of cinnamon to the topping so that it would echo the cookie butter. Overall this was a simple, quick recipe. I would definitely make these again!
